Dancing Goat Distillery – Swiss Mister Chocolate Bitters Rye Cambridge, Wisconsin, USA NOSE: Rich chocolate, milk-chocolate candy notes (sweet milk chocolate, Ovaltine-style), cocoa powder / dutched cacao, hints of vanilla, cream, nougat, honey. PALATE: Very chocolate-forward — creamy cacao, chocolate drink powder, vanilla, cream, nougat, honey. The rye influence shows via spice (baking spices, mild pepper) that counterpoints the sweetness. FINISH: Velvety, lingering chocolate / cacao + caramel tones, with rye spice emerging on the tail. Smooth but with warming spice echo. NOTES: Mash bill: 95% rye, 5% malted barley. Age / maturation: 10 years in once-used bourbon barrels; then finished ~6 months in freshly dumped chocolate bitters barrels (i.e. barrels that had held chocolate bitters). Proof / ABV: 115 proof (57.5% ABV).
