Dancing Goat Distillery – “Chocolate Bee” 11 Year10 Month (12 Year) Limousin Rye Cambridge, Wisconsin, USA NOSE: Dark cocoa powder, milk chocolate, honeycomb and caramel lead the aroma. Vanilla cream, toasted oak, cinnamon, black pepper, orange peel emerge underneath. PALATE: Rich and confectionary without losing its rye character. Chocolate-covered caramel, cacao nibs, vanilla nougat and warm honey are joined by cinnamon, clove, pepper and seasoned oak. The honey softens the mature rye spice, while the chocolate-bitters barrel adds depth and a slightly drying cocoa quality. FINISH: Long, warm, velvety. Lingering dark chocolate, caramelized honey, cinnamon and pepper transition into dry cocoa, toasted oak and a faint bittersweet-note. NOTES: This is essentially a dessert-driven rye with serious age and structure—not a flavored whiskey.
