Holladay Distillery – Ancient Cave Collection Double Oaked Bourbon Weston, Missouri, USA 100 Proof 7 years, 3 months NOSE: Caramel, apricot, cherry and strawberry, layered with cardamom, cinnamon and seasoned oak. PALATE: Caramel and ripe stone fruit lead into cinnamon, nutmeg, toasted oak and pepper. Additional impressions include milk chocolate, cherrywood and gentle barrel char. FINISH: Medium-long and oak-forward, with cinnamon, white pepper, tobacco and lingering chocolate. NOTES: Part of Holladay’s experimental Ancient Cave Collection. The bourbon received secondary maturation in a Char No. 3 American-oak barrel, with that finishing phase conducted inside Holladay’s naturally temperature-stable cave dating to 1837. The cave’s cooler, steadier environment encourages slower oak extraction and helps limit harsh tannin.
