NOSE: Bold and immediately peaty/phenolic — smoldering peat smoke, wood ash, rock pools, lobster pots and Oyster-shell saltiness. Also hints of toasted cereal/grain, warm sourdough or artisan bread, and dried fruit rising through the smoke.
PALATE: Medium (to medium-rich) body. Texture described as lightly oily. Flavors include sweet dried fruit (raisins, figs, dates), savory and salty maritime notes, robust peat smoke, toasted malt/cereal, wood smoke and burnt oak.
FINISH: Long, drying and smoky: lingering peat, salt, wood ash/coal dust, burnt caramel or roasted malt, embers lingering like a hearth.
NOTES: 12 years old; bottled at 56.5 % ABV; matured in refill casks + Pedro Ximénez & Oloroso-seasoned European oak butts. Think classic Lagavulin peat and Islay coastal salinity, layered with toasted grain/bakery notes, sherry-seasoned richness!
