Fonds-Préville Distillery – Rhum JM Atelier Fumme Volcanique Macouba, Martinique in the French Caribbean NOSE: Salted-butter caramel and honey sit atop lime zest and green apple/pear, touched by subtle smoke and mineral earth. PALATE: Bold cane-juice core, then charred wood and black pepper evolve into stewed orchard fruit (red apple), vanilla, saffron and burnt-mandarin oil; the “volcanic” char influence is felt throughout. FINISH: Medium-long; smoky and dark, with prunes, vanilla, grilled bell pepper, agave-like vegetal edge and a lingering touch of cinnamon and char. NOTES: A young agricole rum matured 12-14 months in heavily charred ex-Bourbon barrels — a unique “smoky agricole” expression that blends sugar-cane freshness and barrel fire. Best enjoyed neat or with a splash of water to open the fire-char notes; also excellent for a tiki-riff cocktail when you want agricultural cane character + smoky wood complexity.
