Dancing Goat Distillery– “The Velvet Cherry” 11-Year Cerise Limousin Rye Cambridge, Wisconsin, USA NOSE: Black cherry preserves, ripe red cherries, vanilla, caramel and honey, followed by dried cranberry, raisin, cinnamon, clove and mature French oak. PALATE: Luxurious and fruit-forward. Dark cherry, cherry compote and red-fruit preserves mingle with caramel, vanilla custard and brown sugar. FINISH: Long and silky, with lingering black cherry, dried red fruit, vanilla and baking spice. It closes with peppery rye, dark caramel, seasoned oak and a pleasantly dry, port-like fruit character. NOTES: “Cerise” is French for cherry. This finish gives the rye a dark-fruit character closer to cherry preserves, dried cherries and red dessert wine than artificial cherry candy. The combination of mature rye spice and rich cherry-port influence makes this the fruitier and more elegant of the two selections. Age: 11 years; Proof: 114 proof.
